Why do these letters keep popping up when time comes for someone to name their sports car? Or name the trim level? Or suggest their totally-not-at-all-a-sport-car has a sporty trim level?

same reason Ferrari's are red. Those, my friend, are the "sexy" and "exciting" letters.

Well, GT has nothing to do with sports car... X typically denotes an experiment or AWD system, S implies an increase of sporty-ness not that it is a sports car, Z has nothing to do with sports car in any cars I can think of (in Z cars it's actually basically a model name), and F is a rarely used letter which could mean almost anything. So, with those, I think it's more confusion than anything.
The one up there that is almost always abused is "R". Honda runs the letter into the ground with Type-R everything. A Civic will never be a race worthy vehicle from the factory, but that won't stop them from stamping R all over it.

Z just has a nice shape to make an emblem out of, and since it's not as frequently used in English as other letters, it has an exotic quality to it.
F , uh, I dunno. I didn't know F was too commonly used in sports cars. IS-F, LFA, F-Type, and, uh, what else? F-Series trucks?
